Big Bold Red & White Wines

“Body” describes the texture or weight of a wine in the mouth. This comes from a combination of elements, including alcohol, extract, glycerol, and acid.
Full-bodied wines have a rich, complex, well-rounded flavor that lingers in the mouth.  Both white and red wines have full-bodied varieties. Dry white wines, particularly those aged either fully or partly in wood, tend to be more full-bodied. Chardonnay and Sauvignon Blanc are two examples of these. Full-bodied red wines include Cabernet and French Bordeaux.Full-Bodied and Rich White WinesFull-bodied white wines have often been confused with red wines when served in black glassware. Rich white wines typically undergo similar treatments as red wines in the winery to achieve the bold flavor, and thus have some flavor similarities. Typically, many rich whites undergo oak aging, to add that classic vanilla or coconut note, as well as a process called “Malolactic Fermentation”, which changes the type of acid in the wine to make wine taste creamier.Full-Bodied and Rich Red Wines

Full-bodied wines typically have more tannin, higher alcohol, and dark fruit flavors such as black currant. Since these wines have so much pigment, they are higher in anthocyanin which has shown positive benefits to cardiovascular health. As far as flavor, these wines are the biggest on the spectrum and thus, pair with equally bold-flavored food. Typically you’ll find them served in large-bowled wine glasses

Napa ValleyLocated on the grounds of a historic equestrian center, Black Stallion Winery is the latest addition to the distinguished collection of wineries in the Oak Knoll District of Napa Valley of Napa Valley.  The flavors are tantalizing notes of citrus, chamomile, orange blossom and brown butter. The wine has a rich mid-palate weight creating a multi-layered, complex wine and a lingering finish.

40% Petite Sirah, 26% Cabernet Sauvignon, 10% Petit Verdot, 8% Merlot, 8% Cabernet Franc, 8% Malbec. The Spur is crafted from blending the classic Bordeaux varietals with a Petite Sirah foundation individually to achieve their greatest expression. Beautiful fruit aromas of black cherry and blueberry are highlighted by subtle notes of sweet oak and earthy spice. A ripe tannic structure and balanced acidity.

Elegantly assertive aromas of honeysuckle, white peach and lemon zest hint at the clean, refreshing nature of the palate. With just a touch of sweetness from French oak barrels, a well-balanced acidity and a slight creaminess, this Chardonnay is stunning. It has a bright, quite vivid bouquet with perfumed dark cherry and blueberry scents, a hint of pencil lead in the background. The palate is medium-bodied with a mineral-driven opening. Harmonious in the mouth and disarmingly silky in texture do not let its second wine status get in the way of noticing the structure towards the finish.

The result of the Allegrini family’s expertise, a true classic of the appellation, this red wine embraces tradition, territory and the know-how of country ways. Corvina, Corvinone, Rondinella and Oseleta are left to air dry at least until December and are checked daily to ensure perfectly healthy grapes.  It has imposing structure and depth, as much in its aromas of mature fruit and spices, as on the palate.

With an intense, ruby-red color and violet traces, the wine shows generous, ripe aromas of plum and cherry jam, with hints of spice. Bold and rich flavors of bitter cherries and berry fruits stand out on the palate, with good acidity, balance and velvety tannins.

This well-drained vineyard provides us with a Cabernet with bold tannins and ripe fruit character, which coupled with the natural acidity from the long growing season, creates a beautifully balanced wine.

Attractive notes of blackcurrants, spice box, earth and background oak are followed by a medium to full-bodied wine revealing hints of camphor, charcoal and espresso roast. This elegant, savory, strong 2011 has the finesse and lightness provided by this vintage, resulting in a European-styled red. Drink it over the next decade.
