Prosecco Treviso Sui Lieviti (NV)

• Hand-harvested
• Natural fermentation in stainless steel tanks
• Aging in stainless steel on fine lees for 3 to 5 months
• Hillside vineyards in Premaor, Miane, Refrontolo, and Rua Feletto (within the DOCG Conegliano – Valdobbiadene)
• Wine is not labeled as a DOCG because the Gregolettos choose to use a crown cap, which is not permitted, although they find it is by far the best closure for producing this style of wine with a secondary fermentation in bottle.
• Primary fermentation in stainless steel, then bottled by hand along with a small amount of natural liqueur made from their own grapes that triggers fermentation in bottle.
• The secondary fermentation continues in bottle over an indeterminable amount of time, in fact each bottle is slightly different. Vino vivente! Living wine!
• Aged in bottle for 60 days before release

VILLA di GEGGIANO
Bandinello Toscana 2015

The Villa di Geggiano vineyards are located in the southern part of the Chianti Classico near Siena at an altitude ranging from 300 to 350 metres. The average age of the vines is about twelve years, but some Sangiovese plants have been preserved for over thirty-five years.The first documents which testify to the family’s wine making activity date back to 1725 when Niccolò Bandinelli, who was producing wine in the cellars of the Villa, started expor ting to Great Britain. An elegant Ruby colour. It has a clean bouquet with nice fruit, some notes of stewed cherries and floral overtones. Quite fresh, this freshness is echoed on the palate: it is delicate, has nice fruit and is delightfully round, very pleasant to drink.

DOMAINE SAVARY
Chablis 2015

In 1990, Jean-Marie Raveneau introduced Olivier to Kermit. The clay-limestone hillsides of the Kimmeridgian chain are excellent for growing dazzling, complex Chardonnay, also known here as “Beaunois.” However ideal the soil, Olivier brings his own brilliance to the table. The grapes from his vineyards throughout the Chablis appellation are blended into one fabulously complex village wine cuvée. These exquisite wines are quintessential Chablis, with unmistakable aromas of ancient crushed shells and a pronounced, racy mineral structure.

DOMAINE du SALVARD
“Unique” Sauvignon Blanc 2016

Domaine du Salvard has been a working domaine since 1898, through five hardworking generations of the Delaille family. Today, all forty-two hectares of vineyards are farmed by the capable brother team of Emmanuel and Thierry Delaille, with help from their father Gilbert. To our delight, they have carried on the traditions established by their ancestors, producing a true, classic Cheverny that is both simple and elegant. Unlike others in the appellation who still vinify the widely-planted and forgettable Romorantin varietal, the Delaille brothers have focused their attention on growing fresh, lively Sauvignon Blanc, deeply rooted in the sand, clay, and limestone plains of northeastern Touraine. Pinot Noir, Gamay, and Cot constitute their red grape holdings, creating youthful reds with great aromatics. Gilbert and his sons have also made their own contributions to the heritage of the domaine, including the introduction of sustainable farming practices into the vineyards, as well as temperature-controlled vinification equipment to the winery. Unique Sauvignon Blanc is fresh and lively, boasting electric acidity and juicy fruit with a clean, mouthwatering finish.
